Sometimes we just crave Mexican food. I recently made a chicken fajita meal that hit the spot. Here is my recipe:
One pound of cooked chicken, shredded
One sweet onion, diced
One green bell pepper, diced
One red bell pepper, diced
One Cup of salsa
Two Tablespoons of vegetable oil
One teaspoon of lemon pepper
Green and black olives
One can of refried beans
One cup of medium cheddar cheese, shredded
Two teaspoons of ground cumin
Ten flour tortillas, wrapped in aluminum foil
Tortilla chips
Diced tomatoes
One avocado, sliced
One half of jicama, sliced into strips
Place the oil in a large frying pan, and add the onion and green and red peppers. Sauté until the onions turn translucent. Add the lemon pepper.
Place the shredded chicken in a nonstick frying pan. Warm the chicken gently, and add one-half cup of salsa. Mix it into the chicken. Warm the chicken and salsa mixture.
Heat the tortillas for about 10 minutes in a 350-degree oven.
Open the can of refried beans. Place into an oven-proof bowl, and mix in the cumin. Place shredded cheese on top of the beans. Heat the beans in the oven or in the microwave until the beans are warm and the cheese is melted.
Place the warm chicken, onions and peppers and refried beans into separate serving bowls. Find more serving dishes for the cool ingredients, including the remainder of the salsa and cheese, olives, tomatoes, jicama, avocado and tortilla chips. You might want a special serving platter for the warm tortillas
Using these ingredients, build your fajitas.
