Restaurant inspection reports focus on two types of violations: red and blue.

Red violations are the most serious and are most likely to cause food-borne illness. The violations must be corrected immediately or within a deadline set by the health officer.

Blue violations relate to cleanliness and facility conditions, and are corrected on a set compliance schedule.

A reinspection is required if:

  • Red points exceed 45, or
  • Total red and blue points exceed 65.

If red points exceed 100 and inspectors find poor managerial control, the establishment may be shut down. Closures can also happen at any time if there is an immediate health hazard, regardless of score. Reopening requires proof that all violations have been corrected.

Thermometers not utilized to verify required temperatures.

Improper thawing. Items in both basins, water at 95 degrees. On one item running, second basin food in standing water. 

Potential contamination during preparation. No separation of species in thawing. Veggies rinsed in three-comp used for ware washing (dirty wares present)

Utensils in standing water. 

Improper plumbing. Leaking faucets, two sinks absent cold water, repair.

Person in Charge is still working on obtaining Certified Food Protection Manager certification. Person in Charge demonstrated lack of knowledge of permit requirements and correction of red risk items.

Person in Charge was observed using bare hands to handle noodles. Bare-hand contact with ready-to-eat foods is not permitted.

Whole mangoes were observed unwashed and ready for service in the prep unit. Produce must be rinsed before preparation.

Raw meats of different species were observed stored together in the same freezer container.

Rice was observed frozen in sealed bags at depths greater than 2 inches. Cooked shrimp in a plastic bag was observed in the prep unit at 98 degrees. Improper cooling was observed.

Noodles were observed hot holding on the grill at 97 degrees. Hot-held foods must be maintained above 135 degrees.

Bean sprouts were observed in the prep unit at 70 degrees. Time/temperature controlled for safety foods requiring cold holding must be maintained at 41 degrees or below.

Non-compliance with permit requirements was observed. The mobile food unit was cooking raw proteins and cooling foods on the truck. Produce was being rinsed on the truck while the two-compartment sink contained dishes. Per conditional approval requirements established on 10/25/22, this unit is no longer permitted to operate without an approved commissary.

In-use utensils were observed stored in room-temperature water.

The three-compartment warewashing sink was not properly maintained. No sanitizer was present in in-use sanitizer buckets.

    Just throwing this out. Why is a restaurant or other food purveyor with 115 red points, not immediately shut down?
