Restaurant inspection reports focus on two types of violations: red and blue.

Red violations are the most serious and are most likely to cause food-borne illness. The violations must be corrected immediately or within a deadline set by the health officer.

Blue violations relate to cleanliness and facility conditions, and are corrected on a set compliance schedule.

A reinspection is required if:

  • Red points exceed 45, or
  • Total red and blue points exceed 65.

If red points exceed 100 and inspectors find poor managerial control, the establishment may be shut down. Closures can also happen at any time if there is an immediate health hazard, regardless of score. Reopening requires proof that all violations have been corrected.

Front handwashing sink blocked by a bucket or container. Handwashing sinks must be available for use at all times and must not be blocked by any items.

Shellstock tags were not available. Shellstock tags must be kept for 90 calendar days from the last date recorded on the tag or label.

Hot holding salmon measured at 124 degrees F. Time/Temperature Control for Safety (TCS) foods in hot holding must be at or above 135 degrees F.

Cold holding foods such as melons and sprouts were found at 53 degrees F and 45 degrees F. TCS cold foods must be at or below 41 degrees Fahrenheit.

Missing disclosure and reminder for steaks, and missing consumer advisory at the sushi bar. Proper consumer advisories must be posted for undercooked or raw foods.

Missing Vomit and Diarrhea written plan and kit. The food establishment must have a written plan and an assembled cleanup kit.

No date marking found on chopped lettuce and cabbage. Foods that require date marking must be properly labeled for a maximum of seven days of use.
