Restaurant inspection reports focus on two types of violations: red and blue.

Red violations are the most serious and are most likely to cause food-borne illness. The violations must be corrected immediately or within a deadline set by the health officer.

Blue violations relate to cleanliness and facility conditions, and are corrected on a set compliance schedule.

A reinspection is required if:

  • Red points exceed 45, or
  • Total red and blue points exceed 65

If red points exceed 100 and inspectors find poor managerial control, the establishment may be shut down. Closures can also happen at any time if there is an immediate health hazard, regardless of score. Reopening requires proof that all violations have been corrected.

In-use quaternary ammonium sanitizer was 0 parts per million. The minimum is 150 parts per million. Replace or remake the sanitizer.

Produce, mussels, and meats were stored on the walk-in freezer floor. Foods shall be stored at least 6 inches above the floor.

Eel and tempura shrimp were held at room temperature (70°F) in a toaster oven that was not turned on. TCS foods shall be temperature controlled or properly managed under time as a public health control.

Raw tuna was thawing in vacuum-sealed, reduced-oxygen packaging. Vacuum-sealed fish shall be thawed according to manufacturer instructions and removed from the reduced-oxygen environment as required.

    Thurston Co. needs to have an ordinance that requires a sign posted in plain site at the front of the establishment that shows its latest health inspection “grade” and the date issued. The grading systems used by Seattle and other counties are good examples.
